Ok so I realize there is nothing super genius about this recipe…and that there are only three ingredients…but sometimes we forget how simple meals can be! This was SO EASY and SO TASTY!
Bacon, Spinach and Egg Saturday Scramble!
Start your weekend with this dish…be sure to share with a loved one or cut the recipe in half OR quadruple it for guests.
- 6 eggs
- 4 pieces of bacon already cooked and chopped into bite size pieces(I only eat bacon once a week…its my weekend meat treat!)
- 2 cups of fresh leaf spinach…or to your liking…i would ‘guestimate’ that i had two cups of loose-leaf spinach right out of the bag…but then i chopped it up into small pieces
In a frying pan, drizzle about 2 tsp of olive oil over medium low heat. Whisk eggs in bowl. Pour into heated pan and add chopped spinach and chopped bacon…scramble to your liking! A little grind of pepper and you are good to go.
*Note-my husband is scared of spinach and he ate this. The bacon takes power on the flavor!
