This is one of those dishes that is so easy I make it year-round. It’s even delicious left over for a snack or as a side meal. Travels well too, so a great one to make ahead, throw in your tupperware and bring it with you.
All you need is…
- Your favorite tomatoes (I am partial to Roma’s)seeds removed and sliced to your liking
- Cucumber-sliced
- Green Onion-chopped
- Basil-I prefer fresh basil-give it a quick chop and throw it in. It adds the best flavor. If you don’t have any, dried will work!
- A dash of salt and pepper
- Dressing-a little drizzle of olive oil and vinegar is great. The marinade for the artichoke post I did would be great as well. Even just a little olive oil with a dash of salt and pepper makes a great dressing for this dish.
*This is one of those dishes that you can add as much or as little of the ingredients as you like…that is why I did not post specific measurements. Just go easy on your dressing…less is more here!
