My (our) mom has a delicious Paleo salad dressing that she’s been making at home forever. It used to include parmesan cheese, but since going Paleo, she’s simply taken it out. And it’s just as fabulous! I’ve enjoyed it in her salads for years, and finally made it in my own home today. After calling her for the recipe, of course :) Thanks, Mom!
Mom’s Salad Dressing
- 1/2 cup Olive Oil (use a good, flavorful one that you love!)
- 2.5 tablespoons Lemon Juice (fresh squeezed or bottled)
- 1/4 teaspoon Dry Mustard
- 3 cloves minced Garlic
- 1/2 teaspoon Sea Salt (optional)
Simply combine all ingredients in an airtight container, shake well, and serve.
User’s note: The garlic can sink to the bottom of the dressing jar, so I used a spoon to get some out and onto my salad.
