Keeping it Simple.

Joey is always reminding me how simple Paleo really is.  She’s right. I once had someone tell me that they had a book on Paleo, but it just seemed too complicated.  It may seem that way on paper, seeing all the things we have eliminated from our diet-refined grains, dairy, sugar, salt, fatty meats, processed foods. But when  you realize that lean meats, seafood, fruits, and vegetables are the foods you were designed to eat…its so simple! The other thing I have noticed is that by keeping it simple and healthy I am more willing to try the things I would not have eaten in the past and I actually crave the vegetables and protein instead of the junk I used to eat.

Simple breakfast today was two eggs whisked and then cooked until firm…no stirring, no fluffing, no turning. The eggs turned out about the size of a corn tortilla. Thin and firm. I topped them with leftover turkey taco meat, homemade guacamole, and salsa from our dinner last night. What a satisfying breakfast and everything was in my fridge ready to be eaten.

Lunch a couple days ago…chicken sausages that I love to broil in the oven and left over grilled artichokes from the night before. Yes, artichokes taste good left over…they hold up well in a plastic container and I stuck them in some foil in a pre-heated oven for about 10 minutes or so until they were warm. Another satisfying meal where everything was in my fridge ready to eat!

Tips:

  • Always make extra food to store for leftovers. It makes your day so much easier!
  • Shop and plan ahead. 
  • Choices! Fast food is everywhere, but so are lean meats, fruits and veggies.
  • Look through your old recipes, and figure out how to make them Paleo. I do this when watching the Foodnetwork on TV or when I see a recipe online too. It will help inspire you!
