Leftovers…Spicy Spaghetti Squash with Marinara Sauce…mmmmmm

One of my old favorite meals was left over spaghetti with marinara sauce fried up in a pan…the sauce gets extra thick..almost sticky giving it that rich tomato flavor and the noodles got a little crunchy…basically all the flavors intensified and you were left with a plate of extra gooey, sticky pasta.

The spaghetti squash is as close to that dish as I can get and it was so delicious! I took some left over Spicy Spaghetti Squash from the night before, mixed with some of my Homemade Marinara Sauce, not a lot, just enough to coat the squash, and plopped it all into my frying pan over medium heat and let it hang out for about 15 minutes…enough for the flavors to get busy….and oh my goodness! This was so delicious as part of my lunch yesterday.

  1. Shell, this looks awesome! I hear kids really love this dish too because it reminds them of spaghetti AND because it tastes so good. Imagine how tasty it would be with some of your Mamma’s Meatballs piled on top! Mmmm….
