Another Almond Butter…

April 7, 2010 by Shelley

Ok, I must give credit for this yummy find to my next door neighbor and friend, Lisa.  I believe her exact words were ‘Oh my God, have you tried Trader Joe’s Almond Butter with Roasted Flaxseeds? It is the best…I can’t stop eating it!’ I think she was so excited about it she even put it on her Facebook status one day.  So on one of my weekly Trader Joe’s shopping trips I picked it up…and finally tried it. Almond […]

Leftovers…Spicy Spaghetti Squash with Marinara Sauce…mmmmmm

March 24, 2010 by Shelley

One of my old favorite meals was left over spaghetti with marinara sauce fried up in a pan…the sauce gets extra thick..almost sticky giving it that rich tomato flavor and the noodles got a little crunchy…basically all the flavors intensified and you were left with a plate of extra gooey, sticky pasta. The spaghetti squash is as close to that dish as I can get and it was so delicious! I took some left over Spicy Spaghetti Squash from the […]

Keeping it Simple.

March 3, 2010 by Shelley

Joey is always reminding me how simple Paleo really is.  She’s right. I once had someone tell me that they had a book on Paleo, but it just seemed too complicated.  It may seem that way on paper, seeing all the things we have eliminated from our diet-refined grains, dairy, sugar, salt, fatty meats, processed foods. But when  you realize that lean meats, seafood, fruits, and vegetables are the foods you were designed to eat…its so simple! The other thing I […]

Flank Steak…3 Ways.

February 28, 2010 by Shelley

Flank Steak is one of my favorite meats to cook. There are so many different ways to prepare and serve it, it cooks up quickly, is always delicious and great left over in salads.  My favorite way to cook it is on the grill. Last night I was pressed for time because we had my parents rolling into town just in time for dinner and then we had to be at a 7pm basketball game for our 8-year old son. I had […]

Simple Tomato-Cucumber Salad

February 24, 2010 by Shelley

This is one of those dishes that is so easy I make it year-round. It’s even delicious left over for a snack or as a side meal. Travels well too, so a great one to make ahead, throw in your tupperware and bring it with you. All you need is… Your favorite tomatoes (I am partial to Roma’s)seeds removed and sliced to your liking Cucumber-sliced Green Onion-chopped Basil-I prefer fresh basil-give it a quick chop and throw it in. It adds the […]

Frittata

February 21, 2010 by Shelley

I LOVE frittatas…I love making them, I love eating them, I love saying ‘frittata’…the whole dish is just fun! (fri-tah-tuh). An omelet resembling a large pancake (this is the dictionary definition).  Basically a frittata is like the omelet, only you don’t fold it and you finish cooking it in the oven. It’s the Italian way to make an omelet and it is so delicious! There are so many ways that this dish could go…here is one of my favorites… Ingredients 1 small zucchini-sliced […]

I am always looking for new ways to eat chicken…this is what was for dinner this week! Herb-Pepper Almonds

February 13, 2010 by Shelley

MMMMMMM is all I have to say. These are SO DELICIOUS! These almonds are great on top of a salad, or eaten right out of a bowl. I got this yummy recipe out of  The Paleo Diet For Athletes, by Loren Cordain, PhD and Joe Friel, MS. Ingredients 4 tablespoons olive oil 2 cups whole almonds 4 teaspoons herb pepper seasoning (or make your own mixture of parsley, lemon pepper, black pepper and garlic powder) so…I made my own ‘herb […]
